any threads to decscibe the proper way to do this? or is it a big Kustom trade secret?
is a close match to the grill cloth avaiable?

Welcome to the place!
If I recall correctly talking to Bud Ross him saying allowing 5/16" times 2 for the fold for each where it was sewn or something to that effect. You have to take one apart carefully to know how one is made and then it should be a piece of cake. I have a recovered black 2 x 15 cabinet that they guy charged 2-300 to do it and said he would NEVER do another one for any price! This is a pro custom interior guy that has years and years of doing it.
However, Pleat is correct, the "V" cut foam is the key.

Does anyone know the actual dimensions of the V cut foam that Kustom used?

Is a link you can copy and paste for the grill cloth.
Sewing, the secret is in the V cut foam that Kustom used. That has been the problem in getting a correct finish. Each T&R is 2" so you have to allow extra width for the sewing each T&R. Kustom sewed the foam to the strips. I've seen close examples, but never exact.
